Recipe - Healthy Kale and Chickpea Cous Cous
Add enough cous cous for one person into a bowl and cover with boiled water mixed with half a vegetable/chicken stock cube.
Fry half a small cup of chick peas in a non stick pan with a tiny drizzle of extra virgin olive oil for five minutes on a low heat (hot ring setting at 4 or 3 depending if you have time to stand over it and turn them over in the pan)
Add some chopped onion (as big as you wish) some spinach, kale finely chopped celery and chopped up mushrooms to the pan. Squirt some more extra virgin olive oil on the food you have just added and fry for another 5 minutes. Then add chopped up garlic (one clove would be fine or two if its Halloween) and fry everything for a minute.
Add the cous cous to the pan, any water will evaporate just heat for a minute.
Add a tiny bit of salt to taste.
