Recipe - Vegan - Four bean dip
I have made a bean dip before but decided to this time add adzuki beans and add chickpeas.
The results were amazing!
You put a handful of butter beans, adzuki beans, chickpeas and cannellini beans into a blender.
Then add a quarter of a small onion and two cloves of garlic.
Squeeze the juice of half a lemon into the blender.
Add a sprinkle of salt.
Give it a good glug of olive oil.
Whizz it up until its a smooth paste, you may need to turn the blender off and mix it around a bit removing the dip off the sides of the blender and re-blending.
I was shocked at how good this dip tastes. I was literally shoving dip into my mouth as I spooning it out to put into my plastic containers.
I will probably dip carrots celery and cucumber batons into it but its so nice I might be tempted to eat it on its own or even on some wholemeal toasted bread.
It is amazing how something so simple and so healthy could taste so good.
