Recipe - Vegan - Mixed nut butter with flax seeds
Roast in the oven approx 15 cashew nuts, walnuts, peanuts hazelnuts and almonds in the oven with a drizzel of olive oil and sprinkle of salt. Add a handful of flax seeds to the nuts.
I decided to use my hand blender for this recipe as I found my normal blender struggled to blend the nuts.
Add a teaspoon of coconut oil and a teaspoon of maple syrup. At this point I had my roasted nuts on the kitchen side open the cupboard and a load of flax seeds fell out of the bag into the dish. So I decided to just blend it all together.
Blend until smooth.
You can put into an airtight container and it should last a couple of weeks.
You can use this mixed nut butter with flax seeds to put on toast, to use for stir fries, for a dip for vegetables or put it in your chai pudding or porridge.
If you like bananas you could spread some on those for a tasty treat.
This nut butter tastes amazing.
