Swede Potato and Sweetcorn soup
2 handfuls of small cubed swede
2 small chopped potatoes
Half a tin of sweetcorn (or cut it off two small corn on the cobs after cooking like I did)
3 cloves of garlic
1 and a half vegetable stock cubes
Pinch of basil and tarragon
Pinch of salt and pepper
One tablespoon of coffee whitener (optional)
Boil the swede, onion, potatoes, sweetcorn and herbs also adding the stock cubes. Leave enough water to be halfway up the saucepan.
Once cooked blend and taste.
If you think it could benefit from being creamier add the coffee whitener. I added garlic granuals at the end as I like garlic and felt like it needed more.
I left for a while and reboiled.
